I was surprised to find Irons Distillery today while wandering around Lowe Mill…I guess I don't keep well enough abreast of local news to realize it's been around several months now. I was offered a tasting of both their unaged spirit (white dog) and the barrel-aged bourbon. Both were fantastic! The raw whiskey is honestly one of the best I have ever tasted, beautiful full flavor without the kerosene-y/white tequila thing you so often get with unaged whiskey. The bourbon was a surprise, too. At 90 proof it is robust and flavorful, with enough subtle fire, spice, and kick to make it memorable. I am looking forward to Irons ONE hitting the market (so I can bring a bottle home) and wish Mr. Irons and his staff the best of luck!
