For Irons One, that story is rooted in craftsmanship, patience, and a deep appreciation for the traditions of American whiskey.

Irons One was founded in Huntsville, Alabama by Jeff Irons, whose passion for whiskey and curiosity about the craft led him to establish one of the state’s first modern distilleries. What began as a personal fascination with the complexity and character of whiskey grew into a dedication to producing small-batch spirits with an uncompromising commitment to quality.

Through careful attention to every step of the process, from mashing and fermentation to aging and bottling, Jeff laid the foundation for what Irons One stands for today. In doing so, the distillery earned a unique distinction: producing Alabama’s first bourbon.

As the distillery evolved, stewardship of Irons One passed to Jim McCarty, whose own connection to whiskey is rooted in family history. Jim’s grandfather was a moonshiner in eastern Tennessee during Prohibition, carrying on a tradition of resilience, ingenuity, and craftsmanship that defined an era of American whiskey.
